On my Grand Cherokee, running General AT's.

Whats the recommended way, back to front, or side to side ?
They dont have directional arrows so i assume you can do either ?

Also I need a new spare for the trunk. I was thinking of buying a new AT. Should, and how would I rotate that tyre in the set ?

Front to back.......if you change direction nine times out of ten they get noisy.

On a GC you need to include the spare in they tyre rotation, the 247 transfer case doesn't like different tyres/tread depth between axles

it says in the manual back to front same side, front to rear opposite sides every 7.5k miles.

My car says front to rear same side every 5000 miles - I assume it's to minimise the work of the centre diff as the fronts wear more rapidly..

I rotated at 5000 and am now approaching 10,000 - and as you might expect the tread all round is now about the same (to within 0.5mm or so).

So surely that means I can go another 5000 miles before the extra front wear becomes significant - ie you should rotate at 5000, 15,000 and (if you're lucky) 25,000 etc.
