I'll start off with this: Come On In My Kitchen by Robert Johnson

If anyone hasn't listened to any of Johnson's stuff before, it is very basic: just Robert and a guitar, his tunes recorded between 1927 and 1932 (IIRC). Clapton is on record, "I have never heard anyone more soulful than Robert Johnson"
