I would go for a Shure 57 rather than a 58.
Follow a quick tutorial on removing the x-former and you have a pretty usable mic' for not a lot of cash.
Interface, keep it simple. M-Audio, Lexicon, Mackie and so on. They all do them, they are all ok, none are great until you reach apogee symphony or prism orpheus level.
You won't get top studio level stuff but you can achieve decent results for not a lot of outlay.
If you can add another £100 or so onto the mic' budget look into Rode, Heil or Beyer and you can get some great stuff.
