My favourites are from Daft Punk's Alive tour and from Pink Floyd's Pulse. The synchronisation is unbelievable!

Comfortably Numb was amazing because of the spotlight on him during the solo, everyone was utterly riveted just watching him and no one noticed the 40ft glitterball coming out of the ceiling until it was hit by about 100 pin spots and it lit up all of Earls Court.

Jarre's done a few good shows, but I didn't see the '88 London concerts, nor the Paris La Defense (so I can't comment on them). However, I did see Concert Pour La Tolerance at the Eiffel Tower.
I saw them at Wembley in 88 and that was pretty spectacular.
The actual question is really subjective though as to some extent is down to technology.
I saw Queen in 86 on the magic tour and at the time that was pretty cool, but would be outdone now. I'm sure if you had seen Kiss in 74-75 that would have been amazing at the time but would now look a bit lame. Muse at Wembley was a good light set up but the gig took place in the summer and being outside meant that the effect was a bit lost. Most recently Coldplay at wembley was really good, with loads of stuff going off, the butterfly's being released into the crowd was cool.
The shows are defined by the technology if the time.
