Music machines that make you go OOH
Discussion
That's a theremin I think, as featured in 'Good Vibrations'.
As for music machines, I'll nominate a Hammond B3 + Leslies:

The Hurdy Gurdy was used hugely in the soundtrack to the TV show Back Sails

Coincidentally, this popped up on my FB feed earlier. Not a "machine" as such, but a musical instrument of note:-

That ^ is Jimmy Page's "Number One" 1959 Gibson Les Paul Standard:
On display periodically at the Metropolitan Museum of Art - Jimmy Page purchased this instrument in 1969 from Joe Walsh. When Page received it, the neck had already been shaved down to a thinner profile. It has been Page's main guitar throughout his career, used in every Led Zeppelin performance and recording ( other than Led 1 ) from Led 2 (October 22, 1969 to the 2007 reunion and in his post-Zeppelin work with the Firm and others. It remains in active use today as his primary guitar.

We went to see Heaven 17 a couple of years ago, Martin Ware was using a theremin then. I think they’re touring currently if you want to see one in action. As for music machines, I'll nominate a Hammond B3 + Leslies:

Another obscure music machine that seems very similar to the theramin is the suzuki omnichord which is used by one of my fave comedy bands!

Emerald Guitars make some pretty cool 'normal' guitars as well as some fairly wild 'music machines' that make me go "Ooooh". Carbon fibre (with exotic wood veneers in most cases); their online guitar builder is fun to play with:
