Now in the Cool house we like roast veg a lot. But, every time we do it there is always lots of water coming out of the veg into the tray that needs to be poured away (very carefully) to get the veg to roast nicely.

What is the trick to stopping this?

What time and temp do you use - we don't have those issues?

Try roasting the veg on a wire rack above the baking tray. Only drizzle the veg with oil just before roasting. Make sure the ovens really hot as well.

What veg? Root veg shouldn't have water coming out of it however you roast it.

are you parboiling it before roasting? Could try drying it on some paper towel before it goes into the tray.

How tightly packed is it. If its too tight it might be straming rather than roasting.

Roast "wet" veg (mushrooms, courgette, aubergine, tomatoes etc.) creates fabulous juice that can be mopped up with garlic bread, even better the next day, I put a foil lid on to keep hold of it.

Root veg though should have none, a question of spreading it out enough probably in a single layer lots-of-room tray.

No mushrooms, root veg that hasn't been par boiled. Oven at ~200C with the veg in a large tray.

At 200 any moisture should be evaporating. Is the oven pre-heated? Is the veg. on a tray or a rack? In theory lightly oiled root veg on a rack or tray with GP or silicon paper should roast perfectly.

My pref. method would be to peel and cut the veg. lightly oil and season then roast very high (240+) for 15 minutes then add any herbs, garlic etc and reduce down to 140 for half an hour. Might vary according to the veg size but for most root veg this would work as a general guide.

Put the veg on a flat tray & it wont be a problem, a high sided try seems to collect steam.

Not roasted veg for years ever since buying a steamer.
Correctly loaded, 4-5 mins, job done. Veg still crunchy and flavoursome. Use the water in the bottom to put in to the gravy. Lush.
