I usually grill lamb chops.
Get the grill really hot before cooking. Whilst the grill is heating up rub a tiny amount of fat on to each of the chops and season well with s&p.
Grill on high heat until the chops are med/rare or how ever you like them. Dont turn them too often or the fat on the edge of the chop wont get a chance to crisp up.
It should take no more than 10 minutes to grill lamb chops( depending on size) once you have the grill up to temperature and start cooking

You don't normally roast chops. Maybe she's grilling them and you're roasting them for 90 mins?!!

She's definitely roasting them on a bed of potatoes, cherry tomatoes, onion, garlic and herbs. Can't see any difference in method at all apart from the point of origin!
