I once did a warm salad with scallops, chorizo and rocket. I warmed the chorizo through in a pan until the fat rendered out, then fried the scallops in that oil, poured the lot onto some rocket with a squeeze of lemon and it was lovely.
I quite fancy trying tempura scallops too, I think i'll give it a whirl at the weekend

You have just chosen tomorrow night's tea for me

(chicken and chorizo tonight!)
As before, chorizo, rocket, lemon and olive oil is just lovely and so simple to prepare. I've also grilled them in the shell with a marinade of coriander, ginger, chilli, lime juice, soy sauce and a little Thai fish sauce. Cauliflower works really well, as does a hint of curry flavour such as an infused oil.
Lastly, if you want to be different, keep it simple and serve them as carpaccio with a dipping sauce.

Two scallops per person.
Slice really thin (think Paulie slicing garlic with a razor in Goodfellas).
Lay out on a plate.
Chop a couple of fresh red chillis, and sprinkle over.
Take one lime.
Squeeze all the juice over the scallops and chillis.
Leave to marinade in the fridge for 2 hours minimum (allows the acid from the juice to slightly "cook" the scallop meat).
Remove from fridge.
Eat.

I think the basics are Pea Puree, cauliflower puree, bacon (in many forms) and black pudding in small doses.
Black pudding and Chorizo can over power the scallops if you are not careful.
Ponce about with the purees, bits of bacon, peas, etc and have fun...
