Chefs' chefs - the PH definitive list

Thinking past the celebrity chef culture and focusing on raw talent, I'd like to start a PH list of proper chefs. People who through their contribution to food have inspired you and other chefs/cooks!

JO is definitely in there in terms of promoting food, healthy eating and home cooking. Top bloke despite his affiliation of olive oil in everything (I suspect even his car!)
For me Pierre Gagnaire was my first and real introduction modern cuisine. I still like the classics but I do also research as much as I can and I like to play around with ideas.
Keller is also up there. Take a simple idea and refine it. Thats my approach, simple food done well.

I take it that actually having a job of "chef" isn't actually a requirement of this list ?
Neither Grigson (Jane is wonderful, Sophie is Damon Hill) were. ED was maybe a cook for someone once, but hardly a "chef".
Pretty much everyone has worked at the River Cafe (clearly Ruth and Rosie should be on the list) so that accounts for many of them.
So are we going for cook book writers who inspired ? In which case the "prick with a fork" gets a look in. Or people who actually cook for people in restaurants ? Or a bit of both ?

Love his outlook on food, the lack of pretence, the forraging, bread baking, butter churning, preserving, the self-sufficiency. -Whilst still having a top drawer eye for detail, and innovation.
The man's a genius and he's had a major impact on the way I think about food.
