In a bid to make some oriental veg to accompany what is now a regular dinner favourite, has anyone got a recipe to make Tempura Veg without the use of a load of oil?

Doubt it's possible, but if it is, PH knows....

Tempura really is all about frying in order to get the crispy outside whilst steaming the ingredients on the inside.

The only similar thing I could suggest would be to get some Panko and try to bake in the oven. Never tried this but it could be worth a go if you're after something crispy to bite, but it's not really going to be like tempura though. A bit like the difference between freshly cooked battered fish and fish fingers, they're similar in so much as they both contain fish!

Not sure why frying is an issue for you, I use my wok or any deep saucepan and cook tempura in small batches using vegetable oil. It takes minutes and if you really needed to, you could drain the oil and use again.

Although you can buy deep friers so cheaply now I would do that, as it is easier to maintain temp and safer.

i deep fry in a wok, and apart from leaving a bit of an oily mess around the hob its not a problem.

the ultimate stir fries are deep frying the meat, draining, then stir frying in sauce. The crisy fry coating sucks up all the sauce.

if by 'load of oil' you're trying to dodge fatty food, as long as you fry at the correct temp. you should be fine. of course, all things are relative and any battered / crumbed product isn't exactly healthy.
