Couple of chopped spring onions.
Cruched clove of Garlic
Grated ginger
3 tsp light Soy
1 tsp tomato ketchup
2 tsp rice vinegar
All into a jam jar and top up about half full with oil.
Shake it for 30 seconds.

I often add lime too. I would have said chilli too, but you were already serving it with chilli and rocket.

I love the sharp, sweet, tangy dressing used on Papaya salad, something along the lines of:
2 tablespoons fish sauce
3 tablespoons freshly squeezed lime juice
2 garlic cloves
2 tablespoons palm sugar
2-3 red shallots or half a small red onion chopped
3-4 bird’s eye chillies (to taste)
I can imagine that on grilled fish with a slice of lime on the side. One for the summer! YUM 2 tablespoons fish sauce
3 tablespoons freshly squeezed lime juice
2 garlic cloves
2 tablespoons palm sugar
2-3 red shallots or half a small red onion chopped
3-4 bird’s eye chillies (to taste)
