As it's that time of year again, anyone got any suggestions for something healthy and low fat that actually tastes good?

The following is a Weightwatchers recipe that which we make regularly and I've had very good feedback from everyone I've passed it on to.

Chicken and Vegetable Curry

10.5 points per recipe (old points, recipe is approximately 20 of the new propoints). Takes 25 minutes to prepare, 1 hour to cook. Serves 4. Calories per serving 265. Freeze able.

This tastes even better the day after, as the flavours will have had time to develop.

Ingredients:
Low fat cooking spray
350g (12 0z) skinless chicken breasts, diced
1 onion, chopped
225g (8 oz) potatoes, peeled and diced
225g (8 oz) carrots, sliced
1 aubergine, diced
2 garlic gloves, crushed
2 fresh green chillies, de-seeded and chopped finely
3 tablespoons medium curry powder
50g (1.75 oz) dried, split red lentils
400g can of chopped tomatoes
300ml (10 fl oz) chicken stock
Salt and freshly ground black pepper
2 tablespoons chopped fresh coriander to serve

Instructions:
1. Heat a large non stick frying pan and spray it with low fat cooking spray. Add the chicken and stir fry over a high heat until it is evenly browned. Add the onion, potatoes, carrots, aubergine, garlic, chillies and curry powder to the pan. Stir well so that all the ingredients get an even coating of the curry powder. Cook for 2 minutes.

2. Stir in the lentils, chopped tomatoes, stock and seasoning and bring to the boil. Reduce the heat, cover and simmer for 1 hour, stirring from time to time.

3. Spoon into four warmed bowls and scatter with chopped coriander to serve.

RRS_Staffs "Asian" Beef Salad

Slice up as much of a lean sirloin or rump steak as you need and flash fry it to your taste
Add to a bowl of regular salad leaves and/or rocket
Add some chopped mango pieces

Toss with your dressing comprising fish sauce, soy, crushed garlic, chilli and anything else you fancy

Enjoy!

Even my confirmed bachelor non cooking mate makes this in a few minutes and as far as healthy eating goes Id say its pretty good

I like a big salad, with onion, mixed lettace, avacado, cherry tomato with grilled Hallumi and pine nuts

topped with a boiled, then grilled corn on the cobb with lots of pepper
