I had a GS-1 from the FIL as a christmas present this year. fk me, it's so sharp!



I feel the G2 may be a present to myself very soon. I think with just those two, I would happily do away with the half dozen I currently use.

Must admit, despite a few on here rating other cheaper knives over Global, I do love Global knives.
So much so, Mrs MoJo has just had a set of 6 for Christmas along with the large wall magnet ( so there's room for others to be added !! ) and she is over the moon with them.

Great knives and very comfortable to use thumbup

Undoubtedly brillant knives. For me, the handle and light weight of them didn't suit - which was a shame as my local cookshop has fantastic deals on them.

I got the G-2 for christmas and it's bloody marvellous, i have a couple of other smaller globals also, i think the only other one i want now is the G-9 breadknife, anyone on here have it? You really don't need any other knives, my globals are the only things i use in the kitchen.

yup, tbh unless you cut lots of bread I wouldn't bother

ours is merely wall magnet decoration

Another great one to have is the flexible GS11, probably my most used knife after the large G2.

I had a GS37 with fluted blade for Xmas and it has reminded me that I really really need to get the others properly sharpened!

Globals rock, but I recommend that you take a trip to the chinese supermarket for one of these babies.

Thy are excellent, have had mine for years. Get the Global water sharpener to keep them in top condition. The only thing is that you may prefer a heavier knife for chopping hard vegetables (I do). A heavy Wusthof is your friend for those pesky squashes and tubers. smile

Great knives. And don't listen to the naysayers - they are usually the same ones that spend hundreds on a Mont Blanc pen or thousands on a watch.

These vegetable choppers are fantastic. My most used knife.

If Wusthof, I actually just have a heavy general purpose chef's knife, which I use for veg. I just prefer the heft of it. 9 or 10 inch blade, so quite large. It's a few years old, too!

I'd agree with this, I've got an old "Sabatier" which used to be a10" blade, which is much thinner than when new, but still very sharp.
A few months ago I bought a new chefs knife from TK Maxx, not a brand name, but I liked the weight & balance.

I have a set of Global knived too! They are great but even with a Minosharp sharpener they seem to be getting a bit dull now after a few years use.

Anyone got any tips for getting them sharp again?

I sourced a Global chef's knife for a friend this christmas and had a chop with it when it arrived. It was FAR sharper than my new Wusthof, so much so that I felt disappointed.

He contacted me on christmas day simply saying "what a knife"

proper whetstone treatment. i'm on my 3rd set of wheels on my 2 wheel minosharp, and i won't be replacing them again. diamond steel or whetstone(s) next for me.

as for the knives, they are amazing but high maintenance as any quality knife is. i know people who put them through the dishwasher and moan that they aren't as sharp as when they bought them.

So how often does everyone tend to sharpen there knives then ? Once every 5 to 10 uses, more often, or less ?

Will a whetstone block sharpen them any better than the Minosharp whetstone wheels ?

A steel doesn't sharpen a knife, just hones it. Keep a knife well honed and it won't need sharpening very often.
