FD&R PHers, your counsel would be appreciated!

I have a roll of pork belly slow cooking in the oven. I blasted it at 340 for 20 mins, and it is now slow roasting at 100 in an inch of veg stock/wine with some veggies, covered in tin foil. I'm expecting it to be ready at 8.30 or so. I will be making rostis and some roasted baby carrots to go with it.

What I'd like your counsel on is which sauce to make with this. I was thinking of some sort of red wine reduction (I've seen some wonderful examples of this in 'Picture of your dinner' thread) - and would love to hear of your suggestions and recipes.... yum

How about bunging some finely sliced fennel into the cooking juices and simmering that down?

Fennel and Pork Belly is a great combination.
