Shoulder of venison - how to cook?

I'd do something like this. Might go to 100 and do it overnight though. Make sure it's well sealed in foil so it doesn't dry out, don't be tempted to uncover the meat at any time during cooking and stick the marinade (red wine, juniper & rosemary or something like) under the meat while it's in the oven.Cube the other leg and use it for casserole or mince it with something fatty.

I'm going to pot roast one shoulder and cube the one with the bullet hole in it. Apparently it makes great curry, so I'm going to try a roe deer korma.
A local gamekeeper shoots the deer and will sell a whole one skinned and jointed for £75. Anyone in Surrey interested in a 'group buy', please PM.
Though bear in mind it's an 'opportunistic' thing - he doesn't shoot to order, it's more a case of when he's got one, he's got one.
