Waitrose A Measure of Onion base for Curry
Discussion
My mother has a cheap paperback called "The Curry Secret". Tells you exactly how to make the onion base, and has loads of recipes to go with it.
You can get it on Amazon for about £4. I'd imagine you can then use the Waitrose stuff in the same way.
This is not, I realise, going to help you make a curry this evening!

I use a onion and celery base to all sorts of stews/curries. One onion chopped finely with a celery heart chopped finely, cook slowly for half an hour to an hour with a tight fitting pan until they are disintigrating, then use as the base for what you are cooking, I guess it's a sort of vegetable stock.

are particularly good. You may have to register to read the forums but its free!
