Storing truffles

Just got back from tuscany with a few black summer truffles, they were priced at E280 per kg was that a reasonable price? worked out at about E15 for 3 moderate sized examples

Having never purchased truffles before i dont know how to store them- also how long will they last? I would guess at not long based on the amount of smell they produce.

Also any decent recipe ideas? so far we have had them on scrambled eggs and also on and in Potato Boulangere. I'm open to suggestions

Store them in a sealed jar of risotto rice. When you are done with the truffles you can still have truffle scented risotto.

Fresh asparagus soup, with a poached egg, croutons and some shavings of black truffle.

This, a good quality rubber seal and out of direct sunlight. Depending on the size and shape, preserving the remnants in either oil, or to flavour eggs are also options.

I have just been reading an article in the paper about some kids finding white truffles in their primary school veg patch in Perthshire!
Mary Contini (a food writer and owner of an Edinburgh deli)commented in an associated article.

"We freeze truffles that don't sell. We shave them from frozen, which doesn't affect the flavour".

good tip there. I might freeze my remaining truffle then (one i'm two thirds of the way through and the other was given away)
