Salads/dressing - any recipes or recommendations?
Discussion
As per the title really, any suggestions for salads? Looking for some inspiration for healthy eating.
Some random salady-ness:
Left to my own devices I tend to make a pseudo caesar salad - rocket, feta, cherry tomatoes, croutons, pre-prepared caesar dressing and sometimes some cooked chicken.
Found a really simple but pleasant dressing a while back. Olive oil, reasonable quantity of green pesto, dash of salt and pepper and some Worcester sauce.
Somewhat above my talents to come up with, but I had a fairly basic feta and tomato salad recently with a raspberry dressing. It worked really well.

Leave the green leafy things in the fields! Spare the carrots!
Beany salads are much better. Get the better quality tinned beans (especially for butter beans, or you'll just get a tin of skins) and some fresh French beans (cook them 'til they don't squeak on your teeth). Mix with finely diced red onion and some chilli and garlic. For a dressing, try mustard and honey and oil, or the juice of a lemon with oil.
Runny boiled eggs (quail's if you can be arsed peeling them) elevates it greatly.

Mixed salad leaves, Lollo Rosso, Oakleaf, Frisse etc etc Add whole leaves of coriander and flat leaf parsley, wafer thin red onion and some big rustic croutons baked with oilve oil, (lots of) sea salt and cracked black pepper. Add in some cherry tomatoes, chives and dress with vinaigrette and you are away.
