Sweet potato ideas?

I have a big bag of sweet potatoes in the fridge. I'm off on holiday tomorrow and this is the only perishable thing in the fridge that I need to use. I refuse to bin good food so it is on the menu tonight.

However I'm struggling for ideas outside of wedges at the moment.

Sweet potatoes, talk to me!

Forgot to say we give our toddler baked ones but the skin isn't that great for baking so end up just spooning out the middle.

Pierce a few holes in the skin, and give 3-5mins in the microwave on full whack. When beginning to soften, cut open, add butter/salt and enjoy. Far nicer than a baked spud, and far more healthy!

yup spoon out middle, add mayo, butter, black pepper, mixup, job done

If you do bake them DO NOT BAKE OR AS LONG AS A NORMAL SPUD. They cook quickly - 30 mins or so.

chop them into bite sized chunks, roast them with oil, salt, pepper and a little brown sugar. crumble over blue cheese and possibly some crushed walnuts.

Roast, along with carrots and red onions lick

Or just bake like a normal tattie

Ok, so this needs other ingredients but still...

Sweet pots, bake in oven until done.
Slice in half and sprinkle with crumbled blue cheese and bits of bacon.
Stick them under the grill for 5 mins and then serve with some salad leaves.

Can't speak for Sweet Potato as I'm not really a fan, but ordinary spuds riced with milk freezes well and can be stuck straight into the microwave. A knob of butter, and you are good to go.
