Love it, although I'm convinced that in the restaurants they must deep fry the spinach balls, I can't get them crispy enough making it as per the receipe.

Grilled halloumi.
In summer I pair this with roasted Mediterranean vegetables - various peppers, courgettes, cherry tomatoes, red onion and garlic, plus flat-leaved parsley and a drizzle of lemon-scented olive oil over.
In winter it goes with beetroot, red onion, sweet potato and butternut squash, all roasted in olive oil, thyme and a drizzle of honey, plus a few rocket / beet salad leaves.

Couscous approaches bearable with pomegranate, lemon zest, toasted nuts, and chicken stock. And then it isn't really vegetarian, and it is still only a side dish.
I'd look more toward a simple home-made pizza. You don't need it to rise much, so it is pretty quick. And they can be genuinely good- lots of basil and mozarella. Yummy.
Otherwise, a bean-based salad. Not much cooking skill involved at all, but they can be nice and they are filling enough to be a main course.

For me there are few things nicer than a lemony baby artichoke salad on a sun-drenched terrace with good bread, good company and a good glug of chilled rosé.
Two current favourites (other half is a veggie. But eats fish!):
Couscous with fresh peas, halved cherry tomatoes, spring onions and a bit of coriander mixed in it. Then top with plenty of grilled haloumi and a good amount of sweet chilli sauce.
Vietnamese salad. Recipes are on the internet, but basically raw shredded white cabbage, finely sliced onion and carrot with a dressing of fish sauce, sugar, oil, chilli, lime, pepper and mint (and possibly something else I've forgotten). You can add prawns (or chicken!) to this if people eat them.
Both are bloody lovely.
Would also suggest you look up some Morrocan recipes. Many of their meals have little/no meat as it's expensive. The combination of spices is nice enough to make you not miss the meat, and they're a piece of piss to make. Try sweet carrot salad, Morrocan tomato salad or if you're a bit more adventurous on preparing, zaalhouk (aubergine dish). If you want something hot, vegetable tagines are a doddle (sweet potatoes, parsnips, carrots, onions, various spices and, key, rose harissa).
