Top tip, make sure the oven is on.

Few yrs ago I turned what i thought was the oven on, chucked turkey in, came back a few hrs later to find id turned GRILL on instead.

Top of turkey was on fire, bottom half was still running.

Needless to say that was the last time I was was trusted with xmas dinner, until today that is as the wife is working.

God help us

Excellent story, my biggest disaster was a goose that I was trying to take out of the oven to get rid of the excess fat of which there was about an inch deep. I had been having a few and that might be the reason it slipped out of my hand and about 2 pints of liquid fat spilt over the kitchen floor. It was like an ice rink in there even after being cleared up, I fell about 3 more times due to the drink and the slippy conditions, it was like Laurel and Hardy. My wife and mum gave me the evil eye all day.

My 2 guinea fowl take about an hour so at the moment I'm doing prep work ( drinking a Marstons and typing on pistonheads smile ) I have poured the chicken stock into the pan for the gravy later and also put some beef dripping in my roast potato pan, so it is a relaxed start. I'm a beef dripping and King Edwards man, rather than Maris Piper and goose fat.

I bought some Jersey full fat milk for the cheese sauce for my cauliflower, man I am really looking forward to that veg dish. Put a bit of dijon mustard in the cheese sauce and an egg yolk to make it more yellow and then some breadcrumbs on top with parmasan for a crusty top a la Rhodes.. almost as good as the meat.

Almost had the traditional disaster, Barney our English Springer spaniel got into the shed where I was keeping a lot of the meats, including the 2 guinea fowl out there or space reasons and the fact they are just as cold in that at the moment as our fridge. Being a gun dog you would think he would go for the two game birds, but no, he picked the pack of 4 jumbo Herta frankfurter sausages and started eating the pack out on the lawn. What that says about the relative merits of both foods I will let you decide. He's not a gundog, he is a sausage dog biggrin

Everything going surprisingly smoothly and stress free up to now. Photo later. I have cracked open my 40cm plate....

Put mine is an hour ago, stuffed full of lemon and herbs, all buttered up and bed of seasons and veg for the gravy. Lovely. Veg all peeled and ready to boil and roast and several bottles open for the chef, job jobbed.

Although I did manage to burn myself on the baking tray. Ouch

Ours was fab, hubby cooked the Springer Spaniel waited eagerly for leftovers and was disappointed to see most of them go into the stock pot for soup!!

Ours was the traditional high quality frozen turkey! We're just working our way through the bubbly and making space for the Christmas pud!
