Right... so I have about a litre of plain chicken stock I boiled up from yesterday's carcass, carrots, celery, peppercorns, onions, etc.
I usually just keep it to make rice a little more flavoursome but am looking for suggestions as to what to do with it?

Use it as a soup base?

Risotto - anything that has meat in it or needs a meaty bite. I often use chicken stock in mushroom risotto.

Or use it the next time you make gravy?

I recently made a pea and ham rissoto using home made chicken stock! it was very easy and very tasty!

Soup base of Chinese chicken and sweetcorn soup, or crab and sweetcorn soup.
Chicken stock is a base soup used in many soups thoughout the world.

Boil some sweet potato, butternut squash, red onion and parsnips in it with a dash of honey and blend for a tasty soup. Thats what I did with some a while back, very tasty and a doddle even for someone as incompetent as me! lick

I use it for a base for a noodle dish, not unlike what you get in Wagamama. It takes about 5 mins to prepare and about 1 min to cook and uses about a lite of stock for two people.

I fry, very gently, for about a minute: fresh ginger, garlic and chilli in a splash of oil.
Then add the stock,
then add soy sauce to season,
then add mushrooms, mange tout, sliced carrot or whatever is in the fridge
Squeeze half a lime

In the meantime - In one big bowl per person

Put in a handful of freshly cooked noodles
top with shredded chicken (leftover from the roast, or can use duck, pork, beef)
ladle over stock mixture
sprinkle with a handful of fresh bean sprouts,
garnish with more lime, coriander leaves and chilli

Tuck in with a spoon and chopsticks and enjoy!
