I need some please - got a veggie friend coming for dinner in a few weeks and have no idea what to cook for her.
Normal veggie would be OK BUT - she is allergic to mushrooms so they're out.
Shes also on a weird diet and cannot have the following;
Rice
Pasta
Bread
potatoes (though she can do sweet potato)

Any suggestions would be much appreciated for both starter and main....

Give her a Pot Noodle while you tuck into a nice medium rare fillet steak !

If you cook based on their diet, make sure they cook for you based on your diet - lots of bloody meat!

They do - she goes out of her way to do so in fact!!
Actually, her other half does eat meat so he's not a problem - just want to try for her.

What about a load of roasted veggies (onions/shallotts/cherry tomatoes/sweet potato/butternut squash/aparagus etc) with a pitta bread (you can get gluten free if she is allergic to wheat) or with couscous and add something like feta cheese when its done.

FAiling that, go to M&S - they do a red onion and goats cheese tart, serve with fresh veg (broccoli/peas/asparagus/green beans)...thats what Ali-Kat did for me..bloody lovely.

She also did a Wagamamas reciepe - the Tofu soup, loads of veg and tofu. Can look the name up if you want, but will take longer to make than the others.

The veg can just be shoved ina roasting tin for an hour or so..the tartlet just cook to their instructions.

Ahh the Red Haired One...laugh

Probably best to let her loose in the kitchen in that case, she is great at finding stuff to make out of nothing.!!!!!!! should be on Ready Steady Cook that girl.

I would go with roasted veg and cous cous. Actually sod that - ASK, I know it would ruin the surprise but at least you wont have spent hours cooking to find that the lady is allergic to an ingredient or whatever. And I am sure she would be more grateful that way. I know I would prefer that.

goats cheese tart - looks hard, is a piece of piss.

buy some puff pastry. roll it out and cut into # big circles, where # is the number of tarts you want.

buy a large-diameter roll of goats cheese (waitrose sell a nice english one). cut one thick slice of goats cheese per tart.

put the goats cheese in the middle of the tart, and fold the excess pastry up over the sides.

Bake at 200 degrees for 15 minutes until the pastry is golden.

Season.

ta-da!

if you want to make it a bit posher, you can put caramelised shallots, or roasted garlic...or roasted cherry tomatoes etc in the middle of the tart.

Do a google for Ainsley Harriot's Spicy Beanburgers. I have one of his recipe books with this in, cooked it for the other half's sister, who is also fussy veggie, and it went down a treat! With everyone in fact, thankfully I'd made more than 2 so that all could have a try.

Also, sage and onion tart (without the bacon) is a really tasty option too. Goes down well with meat eaters and vegetarians alike.

(can you tell I spent one Christmas devising recipes to suit all?! wink )

yesAnd put a few sprigs of thyme on the cheese. Or strips of sundried tomato between the cheese and the pastry.

oh yeah, herbs forgot about that. i use rosemary or thyme.

also, rub the inside of the pastry with olive oil first just so its easier to work with.
