Cooking a meal for my new squeeze. She likes salmon, not too fussy (her words) and no sauce. Any ideas gang?

If you can cook outdoors:

Salmon steaks (not fillets) - BBQ. Serve with buttered new potatoes and a green salad.
Even better - get some salmon fillets and do them in a hot smoker (Brinkmann). I like mine lightly oiled with finely chopped tarragon in the oil. Same side serving as the BBQ'd steaks.

If you are cooking indoors:

Salmon fillet, tarragon as in the smoker, and just bake in the oven. Serve with tortellini (pasta) stirred through with pesto. Green beans lightly steamed go nicely with it.

Key thing with salmon is not to feck with it and don't overcook it. It will look after itself.


Oh...if you want to do something with salmon IN you could try...Dr Don's pasta marinara.

1 pack King Prawns - bigger the better, shell off and pre-cooked is best
1 pack smoked salmon - cut it into 5cm by 1cm strips
1 pack sundried tomato paste
1 onion - finely chopped

Fry up the onion in butter until softened nicely - no need for colour. Stir in the sundried tomato puree. Stir in the prawns and smoked salmon. Heat through for about five minutes. The smoked salmon gets "cooked" and changes texture.

Serve on whatever pasta you like - I think tagliatelle is best.

Again - a salad to go with it is all you need.

The food comes together in moments and all the ingredients can be pre-prepared. Great for feeding that special guest, especially if you get her to sit in the kitchen watching you bring it together and chat with her whilst the food does. The right cooking time for her to enjoy the experience and not get bored.

this is a ken hom idea i use occasionally:

get some salmon fillets and take the skin off. if they are particularly large cut then up into smaller rectangles about 6" x 2" max.

then get some spring roll skins from your local chinese supermarket. you want the ones that are brittle and made from rice.

grind some salt and pepper into a bowl and add ground cumin. rub a little of this mixture into each fillet and put a bay leaf [soaked beforehand] on top of each fillet. don't go overboard with the rub, you're after a subtle flavour. you can also use coriander/lime/chilli or anything you think will work.

then, take a spring roll wrap and soak it in hot water until it become flexible. pop a fillet into the centre of the sheet and fold it into a nice parcel.

take a non-stick pan, add oil and get it nice and hot. place your parcels in the pan and turn them every 30secs. the salmon cooks very quickly but you need to make sure every side of the parcel is fried in the oil so it crisps up.

take out & blot the excess oil away before serving with whatever you fancy - noodles, salad & new potatoes etc.

another idea for any fish is as follow:

finely chop a whole stick of lemongrass.
de-seed a medium red chilli and finely chop.
crush one small clove of garlic.
finely chop 1-2 tsp of ginger or galangal.

mix in a bowl with a healthy dash of fish sauce and add a few kaffir lime leaves or the juice & rind of a lime.

marinade the fish if you like but you don't have to. simply take a sheet of tin foil and put the fish in the centre. coat it in the marinade mixture and wrap the foil into a parcel. put in in a steamer for 3-4mins and serve.

I'm not really a Fish fan, but do like a nice Salmon fillet grilled with a Harissa crust.

I use Belazu Rose Harissa and spread a teaspoon worth over a small fillet (2 inch wide). Stick it under the grill for about 15-20 mins until the top has slightly burnt and the salmon is opaque.

Its quiet a strong flavour to go with the fish, but to my palate it works very well. Would go well with some new potatoes and some roasted/grilled asparagus in balsamic.

Job done.

Simply coat the salmon in the spice mix (I find putting the mix on a plate and placing each side in it in turn is the easiest). The wetness of the fish is sufccicient for it to stick.

Grill it for about 10 mins top and bottom and job done. Alternatively you can wrap in foil and bake at 180/190 for about 20 mins.

Fry a couple of salmon steaks skin side down first, then turn over and for the last minute or two turn up the heat and add the juice of a lime and about the same amount of soy sauce. Shake the salmon around to coat with the reducing sauce.

Or this is really good.

Plain grill the salmon, maybe with a squeeze or two of lemon juice over the top first, or if so inclined, a tablespoon of Noilly Pratt.

Serve on a bed of green lentils, when cooking the lentils add handfuls of fresh chopped herbs ( small amount of mint, lots of coriander,basil etc), lots of olive oil and more lemon juice, freshly grind some black pepper over the top once on the plate.

Then use greek yogurt as a sauce for the fish.
Simple, healthy and very tasty.
