A simple mid week salmon dish. Enjoy!!

Thought I would share this simple yet delicious salmon dish I call.... Pan fried Salmon fillet on creamed mash with a garlic and prawn butter sauce.
You will need.
A nice fillet of salmon (skin on)
lemon
Garlic
prawns (fresh or frozen)
Butter (unsalted)
Potatoes
milk or cream
peas (optional)
Firstly make a good creamed mash, I tend to add milk and butter and lots of seasoning. Set this aside.
Now for the Salmon. Add some olive oil and butter to a hot pan then place the salmon skin side down (we want to get a nice crisp skin). Depending on the size of the fillet it should take approx 6/7 mins max.
Whilst the fish is cooking take a good knob of butter approx 1/5 of a pack and melt in a sauce pan. Once melted add a crushed clove of garlic and a good hand full of prawns and a squeeze of lemon. (don't cook the prawn for to long you only want to heat them through).
Now to plate up.
For the last minute of cooking the fish add a squeeze on lemon.
Pile up the mash on the plate and lay the fish on top, spoon the sauce over the salmon and let the prawns tumble over the fish and the plate.
To finish the dish I sometimes add a few peas around the plate for colour and texture.
Now sit down and enjoy with a cold crisp glass of white wine.
