Throw in some chopped onions and clarify them, throwing in some spices, I've been using chilli, garam masala and ginger but there really is no limit here. I've stopped keeping vast amounts of spice in the house as there's so many excellent curry houses within walking distance of my house. Add some chopped meat, I've used beef, chicken and lamb so far, and move it round the pan until its browned off. Feel free to add some shopped pepper at this stage too.
Transfer the contents of the pan into an ovenproof dish and leave in a medium oven for half an hour. Add some tomatoes if want as you put the dish into the oven. Serve with rice &c
Here's a couple of thai ones I use:
Basic Thai beef curry
Simmer a pound or so of braising steak in coconut milk for 40-50 mins.
Meanwhile make up a paste in the blender consisting of: Red curry paste, yellow bean sauce, shrimp paste, chillis, garlic (lots), ginger, an onion, lemongrass (finely pre-chopped), palm sugar, zest and juice of a lime. I add a bit of the Mai Ploy chilli sauce in oil too, but that's just coz it's my new wonder-ingedient.
Mix it all together and cook for 5-10 more minutes. Away you go...
Drunken Beef
Make a paste of garlic, ginger, chillis and an onion and fry it off in a HOT pan. Add thinly sliced sirloin, lime leaves, halved green beans and whole green peppercorns, and fry til the meat is browned.
Add palm sugar, fish sauce and a couple of teaspoons of red wine vinegar and cook for another couple of minutes.
Add a generous shot of whisky and flame (preferable where your guests can see!).
Finish with thai basil and serve with coconut rice.
I'm hungery now!

Spicy Beef in Yoghurt, which takes some of the heat out of it.
500g braising steak, finely sliced
1 tsp salt
300ml natural yoghurt
175g ghee or 3 tblsp veg oil
1 large onion, sliced
3 garlic cloves sliced
1 1/2 tsp ground ginger
2 tsp ground coriander
2 tsp chilli powder
1/2 tsp ground cumin
1 1/2 tsp turmeric
1 tsp garam masala
Place the beef between 2 sheets of greasproof paper and beat until thin, with a rolling pin.
Rub beef with the salt anf then cut into serving-sized pieces. Place in a bowl and cover with the yoghurt. leave to marinate overnight in the fridge.
Heat ghee or oil in a heavey based pan add onion and garlic. Fry gently for 4 - 5 mins until soft. Add spiced and fry for 3 more mins, stir constantly.
Add beef and yoghurt marinade to pan and stir well. Cover pan with a tight fitting lid and simmer for 1 1/2 hours or until meat is tender. Serve with rice.

Not a Thai curry as such, but you've just made me think about the "weeping tiger" I had when I last went to a Thai restarant. Marinated fillet steak on a sizzle dish with a hot/sweet/sour sauce on top.
