on a fish drive this week, got:

2 whole mackerel, two salmon steaks and some cod loin

I was going to roast the mackerel with lemon and herbs but wondered if you guys had any decent recipes?

Potted Mackerel is really tasty and easy to do.

Lightly grill the fish , debone and fork of the flesh from the skin.
Add a knob of butter , a small amount of Horseraddish sauce , lemon juice , parsley , cayenne pepper , salt,.... all in a food processor . Mix , then compress into ramekin. And put in fridge.Leave for a few hours and serve with thin toasted bread or salad.
Extremely good !!

River Cottage fish book has a recipe ive always fancied - slow-cooking mackerel in a similar sauce to the sweet BBQ sauce the japanese use for the yummy unagi (eel). I've never done it thanks to my distance from super-fresh mackerel, but would love to try it.
