Food of the gods.

Every time we go to France to visit the better halfs parents, we always come back with sackfuls of the stuff. Of course it does help that both her uncles are butchers (and hunters).

Normally we get the fairly normal pork or wild boar varieties, but this time we happened across a fantastic market in the centre of Dijon where someone was selling 20 different types, including Donkey & Bull. Needless to say we bought a few planning on shocking our more sensible English mates. Interestingly though, the Donkey & Bull do in fact taste fantastic. They're obviously a lot stronger flavoured than the standard pork versions but I assumed they'd be fairly disgusting.

If you get the opportunity, definitely give them a try, they're perfect as a little aperatif snack and sliced very finely make a nice change from doritos and a pack of KP.

Dry or moist?

Do you take orders for the Donkey, my kids really miss equine butchers since they moved to England

They're hung dried.

As for orders, we go over there a few times a year so I could easily bring back more.

Quite, and partly one of the reasons we always drive. We can bring back as much Cheese, wine, meat & fags as the boot can handle.

Fantastic stuff isn't it? Wonderfully rich - although I haven't tried anything other than pork.

French guy when I was at uni seemed to live on the stuff. I have vague memories of coming back late one night after a few beers to find a couple of gentlemen in the halls having a light sabre fight with 2 rather large pork swords.

Wonderful stuff. One of the many things I miss about not living in France anymore.

Surreal - a thread about 'Saucisson' created by 'Escargot' and until I posted, had been replied to by 'Coq au vin'

(P.S. Wild board coated in dried herbs is one of my faves)

Here's some great saucisson from a fantastic artisan butcher in deepest France http://www.gresard.fr/achat/index.php?catid=3  . Not sure if they deliver to the UK - I buy from charcuterie direct!
