It's my Girlfriends Birthday tomorrow and she is expecting a 'home-made' cake. I know I oculd have done it last night but I cooked a meal for her and her cousin which after clearing away took me upto 11am, and I had a 6am start. So, tonight I have a late meeting and won't get home till 8.30pm and have never attempted a cake before. If I had the time I know I could do it easily but with another 6am start, I don't want to be sorting through remains of cakes till stupid o-clock.

So, I was thinking about one of those pre-mixed ones and cover it in chocolate with cream in the middle. Has anyone made one of these lately, and if so was it rubbish? This doesn't have to be a work of art as it's just the two of us, and she will have her main cake from her Mother when we visit on Sunday.

Thanks to anyone who can advise and enable me to have at least a few hours sleep tonight, bearing in mind I am cooking for her tomorrow night again (albeit finger foodwink )

Get a good one and you might just get away with it. They are not as good as home made but not bad.

They aren't so bad, you can get cadbury ones or jane asher ones from the supermarket which ive sampled before and we very nice indeed (still not as good as home baked though smile )

Well, after a 'liquid' meeting I got the mix and managed to make a cracking cake! Way better than I expected and really easy, all I have to do is make sure I remember to buy cream later to make the filling, LOADS of brownie points for this I think!

My 12 year old daughter made a cracking cake the other week using

Tesco Value Eggs
Value SR flour
Margerine (Stork SB I think)
Coco powder
Sugar
Icing Sugar
water.

Took about 20 miutes of actual effort over about 2 hours. She did 1 hour and 40 mins of homework whilst waiting for it to cook and cool down to fill and ice it.

I suggest you start practicing now (one a week ?) and do a proper cake next year.

You obviously made a really big effort so no matter how the cake turns out, its the thought that counts.

Good topping for a cake is melted dark chocolate with a little golden syrup mixed in. Lush.

I enjoy making cakes from scratch but have to confess that Jane Asher's lemon drizzle cake packet mix is really really good - had a charity bake at work and I couldn't be bothered to spend the night before baking so cheated smile

Homemade cakes all the way.
I make a mean banana and coconut cake
1lb butter, 1lb castor sugar, 8 eggs and 1lb SR Flour, a handful of des coconut and an over ripe banana, mix all in one on fast for about 5-10 minutes, smother in icing and coat in toasted des cocount
Scrummy!
I also have an almond and apricot one, but I am still trying to find the perfect recipe for that one as it doesn't always work.
