If you have a gas BBQ with a hood you can smoke foods beautifully and conveniently by first soaking the wood chips thoroughly and then wrapping them into a silver foil packet. Leave a hole at the top of the foil packet for the smoke to emerge and put it on the BBQ next to the food.
Smoky taste. No mess.

Got some hickory ones. Some foods take the flavour more than others. Fish and chicken seem to take it on more than steak and pork. Worth a punt though.
Anyone knocked up their own hot smoker? I saw Oliver make one out of a biscuit tin on the telly the other day and reckon it might work on a BBQ since a) I don't want to smoke out the kitchen and b) I have an electric hob, not gas
