GM creation or just a damn fine bird?
It's going to be tonight's roast - realised it was too big for 2 of us so invited a couple of friends. Then realised it was probably too big for 4 aswell, so there's 6 for dinner... odds that there'll still be some for sarnies are quite high.
Was going to do my usual "it works" stuffed cavity with lemons, garlic and thyme, but of anyone has any suggestions let me know now! (about to google how long such a monster should be cooked for)

Italian Inspired Stuffing, i'm making this up
140g soft fresh breadcrumbs (use that foccachia with the oily bits and mushroom and sundried tomatos on...) - bang it in the processor,
3 tbs raisins,
2 (or more) finely mashed garlic cloves,
3 tbs (or more) pine nuts,
100g (or more) finely grated FRESH parmesan,
Soaked dried Porchini, shredded.
3 tbs finely chopped fresh parsley and oregano and maybe sage
, 3 beaten eggs,
50g melted butter
You could add some minced pork as well...
I'll stop now... it's starting to cost more than the wrapping (bird)

1.5 breasts for 6 people?Are you one of these mythical people where 'Serves 2' on the packet actually does serve 2, rather than 1, as a light snack?

He thinks it was an older bird, hence the size, and not much of a layer, but the breast meat was gooooood.
Lady at work that supplies me with eggs was selling them, couldn't say no really.
