Can they actually cause you harm?
Yes it hurts but is it actually hurting you (if you see what I mean)?
And, is their effect cumulative? Or is it more like a game of top trumps whereby the hottest wins?
For example, the rather tasty curry my housemate made last night contained some fairly fiery scotch bonnets. I shall give it a score of 2 on an arbitrary scale of heat. I then added some chili and garlic sauce which I shall score at 1 on the same scale. Was the overall effect a 2 or a 3?

Not quite a defense mechanism, the chilli has evolved a system to select what animal spreads its seeds. Birds are resistant to the capsaicinoids that cause the sensation of burning and will carry any seed a lot further. Give a mammal normal chillis and they won't eat them, give the same mammal chillis that are missing the capsaicinoids and they wolf them down, birds it chillis with or without. Very clever.
