one of jamie's - seen on telly. just made it and it is lovely 
1kg flour (he used 1/2 strong white and 1/2 semolina, but i just had normal white flour and used that)
30g fresh yeast (or 2x7g packets of dried yeast)
30g sugar
30g salt
mix the yeast and sugar with warm water (50-100ml) and leave for 5 minutes
make a well in the centre of the flour and add the water mixture a bit at a time
add more water bit at a time until the consistency of the dough is ok
cover with warm tea towel - leave 30 minutes
knock it back and leave again 30 minutes
then roll it out - approx 1-1.5cm thick and place in a tray (sprinkle tray with flour 1st)
then get some fresh rosemary and bash it with a rolling pin (or something
)
then bash 4-5 cloves garlic
add these 2 ingredients to a bowl and add 50-100ml olive oil and a pinch of rock salt
mix around and leave to stand 30 min or so
then, by hand, take the rosemary + garlic and use like a sponge to mop up olive oil and squeeze it out over the dough.
repeat until all the olive oil is used up
then spread the oil over the dough and press with fingertips all over dough to make little indentations for oil to rest in
leave to rest/rise for 30 minutes
then (handling it *very* gently
) place in 200 deg C over for 15-20 minutes.
