For two - sweat a large onion in butter, then add 4 cloves, 2 cardamom pods, half a cinnamon stick, a good grind of black pepper, and 1 cup of basmati rice. Stir all about until the rice is coated, then add 2 cups of water. Bring to the boil in a heavy-based pan, stir once onlythen simmer on the lowest possible heat until the water has evaporated (or stick it in the oven on a low heat). Most people who think they can't cook rice stir it too often - the secret really is to leave it alone.
