Everytime i use these i remind myself how f*cking briliant they are.
They are expensive, espeically because they tend to come in a large bag (from a Thai grocer), but they freeze really well.
Today i stuffed two trout with lime leaves, ginger, garlic, then buried them under shredded spring onions and coriander.
such an amazing citrus taste that kicks the crap out of lime juice or zest.
do it!

I also highly recommend the Thai green and tom yum paste from Wing Yip, and the Prawn Crackers - it's so much fun to make your own!

but they are a million times better than the dried ones, if you freeze them! trust me

Which one ? The Croydon one is quite close to me, and their restaurant Tai Tung is really authentic.
I tend to online order - don't have one near me and it's like Christmas getting one of their boxes - especially as they often put a little freebie in to try - this time it was a chili sauce that was awesome!

Hmm are fresh lime leaves really that much better? I know fresh herbs are generally better, but dried gives a packed flavour also.
