Want to create a nice meal tomorrow night as I have a few friends coming over to stay, they are arriving at 10pm so I need it to be quite light on the stomach and I need it to be quite flashy... one of them reckoned I couldn't cook.
Only thing it cant have is seafood (muscles and anything like that).
Would like to do a 2 course, but can settle for a hearty main course only if its got enough in it so they dont starve.
Any ideas from the PHers??

Good piece of fillet steak and nice tossed salad (in truffle oil), roasted potatoes seasoned, with cloves of garlic and rosemary. Finish off with homemade tiramisu or eton mess. Good bottle of vino. Fresh bread with olives. My idea of heaven!
CAn get most of that but not sure about the oil... any other ideas.... GF doesn't particulaly like steak...Extra trimmed rack of lamb. No fat on it. Does in about 12 minutes at 230C.
Asparagus tied with pancetta dressed with a little home made garlic butter.
New potatoes.
Mint jelly.
Ready in minutes. Looks ever so posh on a big white plate.
Dessert? Ice cream.
All ready in moments (so the 10pm thing isn't a problem) and will look and taste great.

I would do something like a salmon stuffed with herbs and lemon and encased in rock salt, rich risotto, or salmon ramen... but have cooked them in the past few weeks, so wanted something I have not done before.

Get a load of good quality chicken thighs, legs, wings though not breast.
Tomorrow morning before work, put the chicken in a bowl and cover with about 2/3rd of a bottle of valpolicella, a few cloves of garlic and a couple of bayleaves. Put it in the fridge.
About 2 and a half hours before you want to eat, take the chicken out of the wine, dust each piece with flour and brown in an ovenproof casserole.
Once all the bits are done, put them back in the casserole with the wine mixture, 2 tins of decent tinned tomatoes, a tin of anchovies and some seasoning.
Cook at about 140 for 2 hours. Just before the end, drop in a load of black olives.
Serve with ciabatta and a rocket salad.
It smells fantastic while its cooking and makes it easier to chat with your mates instead of slaving in the kitchen.

I made a spanish pork, potato and chorizo stew (a la delia) and it was delicious!!!

I didnt use tomato frito as I couldnt find any but just used some tomato Passatta. I also added bit more garlic. Smelt wonderful when cooking as well.

could always do a quick pasta dish?
melt 5 tinned anchovies in olive oil (they just kinda disappear and add savouriness, not much fish taste)
add some minced shallotts and garlic, and soften.
add 2 big spoons tomato puree and a glass of white wine. reduce.
season well, stir in few capers and black olives. then rip in some italian herbs (whichever ones you like really...basil, oregano etc)
toss the sauce with al dente spaghetti, and some toasted breadcrumbs.
serve with a dry/acid white wine to cut through the saltiness.
mozarella and tomato salad on teh side.

Plotloss?? I can't see him being stuck for what to cook for supper... in fact he's the first person I'd phone for ideas. Bit of a name mix-up, shirley?
