How would you recreate this restaurant dish?

Doing that at home I’d probably oil and season the cauliflower in some sort of Asian seasoning, then roast it on a tray. Then make a gochujang sauce for dipping or tossing. I’d say it would be nicer as dipping as gochujang can be quite overpowering.
Gochujang mayo just mix gochujang paste and mayo together.
Can make it look more fancy on the plate if you pile it up to get height into it, then spring onions and some coriander on top, maybe also a sprinkle of sesame seeds.
ETA just seen it’s a glaze. You could do something like soy sauce, gochujang and honey/maple syrup. Heat it up then toss the roasted cauliflower in it in a bowl. Then do the fancy bit I suggested.
