Been discussing this with some of my fellow amateur cooking friends and I have a very perverted and evil poll - imagine that an evil genie gives you the option of either making butter illegal or chicken illegal. You have to pick one. Which do you pick and why?
I pick making chicken illegal because ultimately I can substitute turkey for most stuff. But I can't spread chicken on crumpets. I seem to be in the minority though.
To be clear this doesn't make eggs illegal.

Butter. Because I can make my own butter from milk very easily without anyone else being aware. I can't say the same about making my own chicken.

It's a no brainer. Chicken because you need to work to make it tasty whereas butter improves almost everything* it touches.

I've got more seriously into cooking, and more importantly into baking (where everything is definitely easier with butter than with a substitute) over the last few years...and butter is now a frequent go-to for all sorts of things.
A few of my more frequent uses (although knowing you lot someone will tell me I'm doing it wrong ):-
- garlic prawns - add butter to the frying oil, or just fry in butter to start with - beautiful caramelisation. Ditto scallops. And asparagus.
- steaks - baste at the end / add a little knob on top
- roasting poultry or game - baste in butter + juices
- pasta - toss it briefly in a little butter, although a good olive oil also works there
- for those who want something on their potatoes (jacket or new), butter is definitely better than the alternatives
