What to do with this fillet?

For me and Mrs UTH, any ideas what to do with it?

It seems a bit too small to cut into steaks, which is what I'd probably usually do. I can use the oven, hob, BBQ.....so I have options in terms of cooking apparatus but right now I'm a bit stuck for ideas. Not sure I want to go the full hog and do something like a Wellington.....

But probably you won't have the time to fart about with a beef gravy, so I'd suggest a good sear, then slice for Tiger Cry Thai beef salad.

Carpaccio might also work. The Anchor in Ripley serves this with mustardy celeriac remoulade and walnuts. It's sensational.

Haha, yeah I don't doubt it, sadly that's just not gonna happen on a working Wednesday.

That's what I would do I soak in a drop of brandy too prior to cooking.

Off to a wedding followed by Ibiza this Friday, so time isn't on our side either!

Like the sound of Japanese style though, I shall look that up

I agree, a decent cream and mushroom sauce, bit of beef stock with plenty of cognac (my preference), lots of paprika and some good quality wild rice.

This, although I'd be happy with it seared and sliced with a good tomato and shallot salad and some greens.
