Having a go at the weekend… anyone got a favourite recipe? And favourite accompaniment?

250g dried chick peas soaked as per the packet
1 tablespoon minced garlic
1 medium onion, finely chopped
2 tablespoons finely chopped fresh parsley
1 teaspoon ground coriander
3/4 teaspoon ground cumin
1/2 teaspoon kosher salt
Freshly ground black pepper, to taste
2 to 3 tablespoons all-purpose flour
1 1/2 cups vegetable oil, more as needed

Mash it all together in a bowl and then create golfball sized pieces and fry until golden. Dont be tempted to make the recipe with tinned chickpeas as they will be too soft and your falafel will fall apart in the oil

Finally I find out why I have been going wrong on my previous attempts, thanks for the tip/recipe!

Being a veggie, I'll have falafel in a kebab rather than doner meat.
I always spec with chilli sauce, garlic sauce, halloumi and full salad
Also goes great with houmous and baba ghanoush.

I love falafel.

Strictly speaking, these are not falafel and the spec is more than a few years old but it works and people like them. Just use the quantities in "Unit" column to scale up or down as a %. This is a spec based on catering size tins of chickpeas which work fine if drained properly and the extra moisture is compensated for by gram flour.

Just roll into golfball sized balls and deep fry until golden (not the dark brown you normally associate with falafel)

Best I ever tasted was off street vendors in Israel a few years ago. These in a donner kebab style pitta bread. Oddly falafels from Turkey weren't that nice, but washed down just as easily with the local beer lol.
