Lots of lovely helpful people in this thread, and it may well be helpful to someone - a set of 7 Global knives plus an 'acquired taste' block is currently on sale for £250:

Bit of digging says ecoookshop buy up clearance and end of line. I know this particular set and block were around a couple of years ago and not exactly to my taste but the knives themselves will be the same and stupid cheap if you are in the market for some Globals.https://www.ecookshop.co.uk/ecookshop/m/product.as...

Ive had a Santoku for many years, and I really like the way it handles, but I cannot get an edge anything like paper cut sharp like they show all the best blades.
Only have the 2 stone Minosharp, which I believe to be the thing for Global without geeking out.
You need a finer stone to polish the edge.Only have the 2 stone Minosharp, which I believe to be the thing for Global without geeking out.
I re-did all my Globals on a 1000 grit since I thought I might as well learn to sharpen properly. It's not particularly difficult and the difference is like night and day.

My only real gripe is it doesnt keep an edge, despite not going near a dishwasher.
Years ago I had a an Opinel pocket knife (was a farm worker) and Ive never yet met a kknife that would keep an edge as well, regardless of how much abuse you threw at it,

Great deal! Can bin the block and get a cheap magnet holder.
I'm sorely tempted, but I have really gone off my Global G-2 which I've had for 17 (!) years. The most used knives in my kitchen are now some random IKEA chef's knife I picked up from a rental and a £10 Kiwi nakiri knife.

Cheers guys, ordered.
Already have the G2 and GS3 (of that set) plus a couple of others, but its no bad thing to have a spare of your most used knife and the others will find much use, just not justifyable at the normal prices!
Wonder why so cheap, if the holder was such a turnoff you think they'd keep the blades and flog off/crush that bit? Other places have it discounted to only not quite that heavily.
Gonna need a second magnet now to match the other not-the-global-one...

Not my sort of knife selection for especially as 2 of them are serrated type. But fantastic price. Would make a brilliant wedding present etc. Great buy.Already have the G2 and GS3 (of that set) plus a couple of others, but its no bad thing to have a spare of your most used knife and the others will find much use, just not justifyable at the normal prices!
