Merry Christmas all!

Eek! I’ve just opened the Christmas turkey and there is this discolouration along the breast bone. I’ve never seen this before.

Is it off/mouldy? It doesn’t smell off. And it doesn’t scrape off.

Fresh or has it ever been frozen?

I can see what you mean but is that the 'breed'?

Could take a sharp knife and slide down the centre eitherside to see if any discolouring goes within

Rather inappropriate on this day of goodwill xmas

We ventured into a brace of partridge last night. Oven cooked for 25 minutes as instructions but still very pink and a little tough. Stuck back in the oven for 7 minutes and all was fine. Meat less pink which is as it should be.

I had food poisoning many years ago. It was horribly painful. Now I'm always careful to ensure food is fresh and properly cooked.

with the many reports of turkeys going off each year , ive never understood at christmas when you pay a massive price for a fresh turkey say on the 21st with Turkey out of date on the 26th ....................when you get it home you freeze it until 24th ??

was always told by a good butcher buy a fresh turkey 2 days max before you cook it , all these supermarket turkeys with 5 days are all bullst , buy it, freeze it ,defrost and slow cook it

Thanks! That is exactly what we did! Then flipped over for last 30mins. We’re all still alive and was v good - best turkey we’ve had in a long time - shame about the bit of missing skin but wouldn’t be Christmas without some kind of near disaster biggrin

You cannot win with fresh turkeys - it's such a lottery due to the sheer quantity they are shifting in the last few days before Christmas.

Ok, it was over 20 years ago now, but we ordered one from a well known quality supermarket and collected it on the afternoon of the 23rd.
We decided to open it very early on the morning of the 24th - we wanted to get ahead with guests coming.
You can guess - it absolutely reeked.

I was dispatched the 15 miles to the store, and was able to get a replacement, which they opened for me to prove it was ok. Apologies and refund, but if we had left it until Christmas morning like normal.....?

So my top tip is always open it a day early, to give yourself wiggle room.
Or stuff the turkey.....and get something edible instead, especially if you are having a quiet one, just the two of you.

Agreed.

I sent my domestic staff to the local butcher instructed to buy a beef joint 'about 3lbs in wieght'. Returned with a lump of topside that wieghed 3.2kg!

Cut it in two and stuffed half in the freezer, the other half lasted all week and was lovely.

My recipe for a happy marriage is always say "yes dear", never say "calm down dear", and never trust her with either weights and measures or geography.
