I’m planning to do the Jamie Oliver marmalade & honey glazed ham for Christmas Day.

Will I be ok to poach the joint on Christmas Eve, leave it overnight in the fridge in foil and then roast it on Christmas Day?

I can't see why not.

Personally I prefer to poach ham as it seems to remove a lot of the salt.

I'd roast it once it has cooled enough to handle after the poach.

If you let it cool completely then it'll take a long time to get hot all the way through, and the end result will be dry and chewy.

I'm poaching mine right now, and trying Nigella's ginger glazed ham for a change smile

Yes. In fact, mine have turned out better leaving it to cool in the juices overnight.

Fortunately no smell when cooked in our AGA. Did the ham yesterday, currently cooking the beef and then slow cooking the turkey overnight tonight.

Will be pulling an all-nighter, then catching an hours snooze in the morning after the kids have opened everything. I may actually have my first ever nap after a Christmas dinner tomorrow, guess I’m getting to that age.

Next question, my gammon is 1.5kg, how long should I poach & then roast it for?

20 mins per pound + 20 mins.

Half time poached, half time roast @ 180c.

Or until internal temp 68c

Just done ours

As above, internal temps 60-65C so 1.5kg is roughly 60 mins or so? Also, when you poach it, light simmer, no more than 85C water...makes a good bit of difference. Roast at 180 for 20 or so, if you have a heavy honey/sugar glaze keep a close eye.

Way over the top pulling an all nighter for Xmas dinner , good waste of sleep and chances are it won't be appreciated and you'll feel exhausted .

I’ve been up all night with our puppies anyway, it just made cooking the Christmas dinner easier as I’ve been up anyway. Almost done now thankfully, just the veg to go and that doesn’t take long.
