If you like stilton, but find that it can be a bit too acrid (like the Cropwell Bishop I just had), try some Cashel Blue instead.
I spied this at the cheese counter in Waitrose and was offered a sample. Delicious! To my uneducated palate it's halfway between stilton and cambozola. Recommended.
I think Cropwell Bishop must use the same sales manager as Doom Bar - it's everywhere, but not actually very nice.

Shropshire blue is one of my favourites. Widely available and in Aldi as well.
A good cheese but i would think too similar to stilton for the OP's tastes, incidentally the Aldi 'Specially Selected' shropshire blue was recommended in the the telegraph Saturday supplement as the best budget option blue cheese when they (well some cheese expert) were compiling a supermarket cheeseboard, (incidentally the colston basset waitrose no 1 was the star buy in the blue section).I'm not massively keen on blue cheese but the best alternative to stilton in that category for those who think stilton too strong was the Waitrose No 1 Piccante Gorgonzola, which they described as sweet, salty, nutty and fudgy and less potent than stilton. Personally I've always found gorgonzola gagging, but may be worth OP trying?
Picked up a couple of the recommendations in that cheese selection as was in Asda/Morrisons on the search for Tunis cake (i cleaned Sainsburys out) and have the Asda extra special gruyere (which was the star buy in the misc. hard cheese section) and the morrisons 'the best' camembert de caractere (star buy and best budget option) in soft cheese category stinking out the outhouse fridge. The Asda i went in didn't have the best budget option goat/sheeps milk cheese, the ossau iraty (sheeps milk). it did have the recommend alternative in that category Rosary ash goats cheese, but i hate goats cheese.

It’s creamy but without the bitterness of Stilton and we absolutely love it. We buy a full truckle in the first week of December and it has normally gone by the time I go back to work.

I generally like stillton, it's just that some brands - perhaps those you find in the lesser supermarkets - can taste too strong and acrid, maybe because they're not matured enough or have been existing anaerobically in cling film for too long? I don't think cling film is good for blue cheese.sean ie3 said:

I'm with you. As much as I love some Roquefort I can't sit there eating loads. A good gorgonzola sinks down a bit more regularly. I'll annoy people a bit more, currently got a thing for lots of Brie.
