How many eggs do you use?

I buy 6 free range.
Kept in fridge due to infrequent use. I take one out and let it warm to room temp if going to use.

Anyway usually 4 weeks or so past the use by date on the egg box I still have 5 left. Jeez. I should hard boil and pickle them or something.

Anyone else a low user?

(I need to get out more)

Maybe eight a month for eggies and soldiers in bed on a Sunday morning, sometimes scrabbled egg on toast for lunch or egg & mayo in sandwiches for a picnic - that's about it.

I have an omelette for lunch most days, 5 or 6 each time. 30 a week or so.

Same. I boil 20 ish eggs in one go in a large pan, as they keep in the fridge a week. And then just peel and eat for breakfast and as a snack. Great Protein and nutrition. Keeps me from snacking on unhealthy/low protein/carb alternatives.

And then a few fried eggs in lots of butter once or twice a month.

We have hens, so we get 3 everyday, they all getceaten, mostly by me, omlette and scrambled.

Give it a go.

You can peel them in one go, but they say keeping the shell on keeps them fresher.

Sort of what the missus does. We have an boiled egg contraption which does 6 at a time so fill that when we're doing some.

Otherwise it depends on the week. If she's having them for breakfast, if we're having ramen or egg salad in the week or some random baking gets done etc.

So probably about 6 on an average week but can be anywhere between 2-12.

As a boiled egg expert, can I ask you why some boiled eggs are easy to peel, and some are basically impossible, where you lose most of the egg?

Freshness of the egg:

"The fresher the eggs, the harder they are to peel. This is because the egg white or “albumen” in a fresh egg has a relatively low pH level, making it acidic. When cooked, these fresh egg whites bond strongly to the inner shell's membrane. As an egg ages, the pH level rises and the inner membrane is less likely to bond to the albumen, so the shell peels off much easier. "

Older eggs peel easier I think.

Sure I read somewhere that it was down to less of something in the chicken feed due to cost?

Cant for the life of me remember what it was though!

Always 1 every morning, as I like bacon/egg/cheese baguette for breakfast. Set in my ways on that. Better half often likes 2 poached eggs for hers.

We (2 of us) sometimes have omelette or frittata which is 4 eggs. Last night made FEB chicken which obviously needs an egg. 6 seems to be the optimum number to keep in, replacing when we get down to 2. A dozen would be too many and <6 would be too few.

I bounce around, so at present I'm on about 4-6 a week due to lots of ramen bowls, but at other times a box will last me a couple of months plus. I always do the 'float in water' test on older eggs (if they float they are gone).

My next door neighbour's chickens escaped & I helped her round them up.

She left me some eggs to say thanks.

I took them back because I have no idea how to operate them.

I'm 64.

2 a day generally, breakfast is nearly always 2 eggs scrambled on either a slice of sourdough toast or 2 rashers of bacon.
