I've made this recipe maybe 4 or 5 times. https://www.jamieoliver.com/recipes/chicken-recipe...

First time I made it, went perfectly. Ever since, it has not. One time I realised I put the pastry in the fridge after shopping and then went to use it straight from the fridge, recipe says that's not ideal.

But the other times I've done everything as per the recipe - and the pastry element of it is literally open packet, roll it out, put in oven......how can that not go right every time?

Any ideas how on earth this simple process can be done incorrectly?

Some shop bought ready made puff pastry is crap. Jus-roll tends to be ok.

Have you tried a test piece of pastry on a baking tray?

Also try pre-heating the oven 20C higher than the cook temperature and reducing when you put the pie in.

Make sure your scores in the pastry are light and not cutting through the layers.

Check the amount of milk / egg wash isn’t too much.

Yeah, I've only used Just-roll......

I'll give a higher heat a go and be extra careful with the scoring tonight.

We used JusRol for years - in block form. The suddenly we had one that blew whilst well within date and had a strangle smell with it and later packs were ridiculously sticky when opened. Ever since it has been a disappointment. The fresher the better, obviously, but not over rolling it too is best. Since that time we've tried all the own-label supermarket brands but only Tesco's own brand in a roll form works well but again fresher the better. Jus Rol is owned by an American firm but whether the deterioration coincided with its acquisition by General Mills I cannot say.

We use Aldi and Lidl with similar acceptable results, have M&S in the freezer to be used sometime in the next few weeks.

That confirms what we thought, the use of palm oil. We made sausage rolls a couple of weeks back with JusRoll and the puff pastry was rubbish. It didn't have a decent rise and was nearly raw next to the meat. The taste was a bit strange as well. We haven't seen all butter puff pastry for a long time now.

It doesn't have to be butter either. For medical reasons we have no dairy products at home and the 'old' Jusrol was excellent, this iteration is inedible.

Well, it worked pretty well last night. No idea what I did differently really, although the use by date was late Nov so maybe it was just quite fresh?
