Following on from the 'who makes the best' thread I can't find my ideal crisp which basically need to be fried (or at least done with oil) and much darker than shop bought. Much like the 'overcooked' few you'd find in the bag years ago before the conformity police on shape size and colour took over rolleyes

Never made them before other than thick scallops which I prefer with my ham and egg as opposed to chips.

Done a bit of research and it seems that Russet Potatoes are the ideal variety for dark crisps (no idea why but that's the route I'm going) and managed to find what looks like the only supply in the UK? and ordered 5Kg from Amazon at an eye-watering price..........

My favourite flavours are Cheese and Onion and Tomato so did a drunken order the other night and got these...........



All set for a dummy run before my Russets get delivered.

So any tips?

Cheers all. Mandolin to hand and Youtube scoured. First batch were just like the odd 'burnt' crisps I love. Dusted with cheese and onion powders along with the obligatory salt...........







And my mega priced Russet Potatoes have arrived for what could be 'the perfect crisp' smokin2

Not quite the same, I’ll grant you, but just had excellent results making pork scratchings in the air fryer.

May be worth an experiment. Toss in oil, air fryer at 180degC and cook for five minutes at a time, tossing carefully each time?

They might be a bit more difficult to make but keep us posted on the results.

As a result of your crisp making, I have stop procrastinating and asked Mrs Cupcake to get a mandolin and I am having a go myself.

At that money for Russet Burbank I’ll look into posting you! we grow them for McCain.

They’re long so make chips rather than crisps commercially (crispers prefer rounder varieties)

Came on here to say homemade crisps for us was just the skin peelings before we made the chips!!
