Homemade Crisps - anybody make them and how?

Following on from the 'who makes the best' thread I can't find my ideal crisp which basically need to be fried (or at least done with oil) and much darker than shop bought. Much like the 'overcooked' few you'd find in the bag years ago before the conformity police on shape size and colour took over
Never made them before other than thick scallops which I prefer with my ham and egg as opposed to chips.
Done a bit of research and it seems that Russet Potatoes are the ideal variety for dark crisps (no idea why but that's the route I'm going) and managed to find what looks like the only supply in the UK? and ordered 5Kg from Amazon at an eye-watering price..........

My favourite flavours are Cheese and Onion and Tomato so did a drunken order the other night and got these...........
All set for a dummy run before my Russets get delivered.
So any tips?
