The Palmerston is right at Haymarket and very good. Noto on Thistle Street is excellent as is the same chef’s new place Tipo. All walkable distance. The Outsider is mid priced and has good castle views. Better in the afternoon about 3:00 once it calms down a bit as can be noisy. Then you’ve got steak places and seafood places. Chop house is my favourite. Ondine or the White Horse probably best for seafood. £££. Fishers is good. Go there a lot ££. Baba for Middle Eastern. Chez Jules for cheap steak frites at lunch.

Not been in a while but it’s good. In an old bank. Nice building. Real Italian food not British Italian crap. High quality ingredients.
If you fancy Italian try Tipo though, it was amazing. Have the cheese donut things. Zeppole!
Wherever you go book well in advance. It will start getting Christmas busy.

I came to say that. Best Hawksmoor I have been in.If it's a Christmas type trip then I'd see if you can get booked in at The Dome for afternoon tea.
The Witchery as already suggested is a lovely spot for fine dining, it's at the top of the Royal Mile so a pleasant place to be with the castle esplanade nearby. If you've got the timings right then a visit to The Scotch Whisky Experience is worth it too!
Another place for a bit of fine dining is Rhubarb which is at the beautiful Prestonfield House - I've had afternoon tea, dinner and even been to a wedding there and it never disappoints. There is a new restaurant popping up at the site of 21212 which was starred. Unfortunately the chef there passed away a year or so ago and it is now going to be called Lyla - opened recently and might be worth checking out.
For plain and simple but bloody delicious steak, I'd go for Chophouse over most other places. Never had a bad experience at any of their three spots in town, any of them would do!
If the weather isn't too bad, you fancy a nice fish and chips and are down near Newhaven harbour or Ocean Terminal then do give The Fishmarket a go, it's bloody good and ran by the same outfit as Ondine.

Just read the article and it is the same chef who owns Tipo that has opened Lyla. As above, definitely Piggs. A tapas place. A lot smaller and livelier than we expected but that turned out to be a good thing. Book well in advance (we struggled to get the perfect timing even booking a month in advance). Superb food, fun, and really great team running the place. Also try Baba. A middle eastern restaurant closer to Haymarket. Loved every mouthful, full of flavour and textures. Just thinking about it has me salivating again. Book in advance if you can.
If you enjoy coffee shops, try Urban Angel for lunch on Hanover street. Beautiful salads and breads etc. As well as a very decent coffee! Small but charming.
Finally, a friends daughter who lives in Edinburgh recommended Under The Stairs. A quirky restaurant in a house that seems to get great reviews too. We didn’t get to go, but looked very interesting.
