Making pine nuts green...

Hi all,

I'm hosting a dinner party on Saturday and one of the guests has a nut allergy.

I really want to make a recipe for stuffed dates with pistachios sprinkled over, sans pistachios. I think pine nuts should make a fine substitute, but the recipe I'm making looks great with the green 'pop' of the pistachios - see below.






I know this is over the top, but can I somehow make my pine nuts green? i.e can I just toast them, chop them then throw them around in some food colouring?

You can get natural colourings like matcha powder, not sure if it has a strong taste. Have you checked they are not allergic to pine nuts? smile

Whats the stuffing? Can you not just use something non nut based ?

This seems fraught with danger to me.

I would sub with something else, like honeycomb, candied katsu breadcrumbs, or picked apart vermicelli baklava.

Or take it in a different direction with pomegranate seeds, yogurt, parsley etc.

I would make a glucose tuiles with green colouring and brake it in tiny bits to get the effect of green sprinkle.

Glucose tuiles:

100g white sugar
30g glucose
20g water.
Colouring

Put everything in a sauce pan and bring it to a boil take it off just before it start to colour. Poor the caramel on a Silpat and let it cool down. Brake it into pieces or smash it.

Should have said, they specifically told me they could eat pine nuts hence the idea! They are in fact not nuts but seeds - who knew!

Thank you for the thoughts. Interesting ideas with both the matcha powder and candied katsu breadcrumbs... MC, do you mind sharing a recipe? Panko + honey, baked for 10 min? Kind of like granola?!

Panko and honey - give it a good old stir and dehydrate in a low oven.
