To add a counter here.. when done Shabu Shabu style it can be fabulous.

I went to a BBQ and took some chiken pieces. The host microwaved them befor putting them on the BBQ. Some folks microwave meat, then place under the grill to finish it off. Which makes my mind boggle.

I went to a BBQ and took some chiken pieces. The host microwaved them befor putting them on the BBQ. Some folks microwave meat, then place under the grill to finish it off. Which makes my mind boggle.

If mass catering, or even if not, poach chicken and sausages in stock until cooked though, then crisp up on the BBQ.
Obviously anything prepped in advance needs to be rapidly cooled and kept refrigerated prior to the crisping.

A lot of people are terrified of cooking chicken on a BBQ so do what they think will stop food poisoning. Sounds utterly rank to me.Bit like when I BBQ at my parents, whenever I am cooking the food my father who can't even manage to cook a pizza and chips in the oven without messing it up stands over my shoulder.
As soon as I say it is ready he will without fail say "I would give that another five minutes"
My parents then insist I leave their steaks on the BBQ and they are not happy until they are well done.

I've upset the SiL because I won't give them any 'decent' red meat as they want it over done - and I'm not wasting money in buying it for them if they're going to want it ruined.Ranger 6 said:

OP immediately reminded me of the scene in Apocalypse Now where Capt. Willard is talking to Chef about what it was like joining the Navy as a trainee chef:
Chef: They lined us up in front of a hundred yards of prime rib. All of us, you know, lined up and looking at it. Magnificent meat! Really! Beautifully marbled... magnifique! Next thing, they're throwing the meat into these big cauldrons. All of it, boiling it. I looked inside, man, and it was turning gray. I couldn't fkin' believe that one!
ETA - chef is right. Decent meat is not for boiling!!
